Zoom is regularly found on my vulnerability scans. I would like to regularly keep it up to date with a combination of Patch My PC and policies.

This is already supported - Zoom have just changed the name from Zoom / Zoom Meetings to Zoom Workplace.
We will be changing the name you see in the Publisher soon now that we have just released a new version of the Publisher that tracks apps by ID rather than name that makes it easier for us to change app names.
