Today in public preview you can't edit the deployment settings when using update rings.
Today I need to delete the app completely in order to make a change to the deployment.
I really need this option...

This is already in public preview :) If you enable Public Preview features in the cloud portal > company tab, you'll be able to edit update rings :)
