Add Version of an app but have option to keep old version deployed

When using the cloud custom app and we want to add a new version, we would like to be able to keep the previous version until the new version has been tested. As of now we have to create a new app and deployment and it is a pain to change the names and deployments each time. If we could utilize the add version functionality and have the option to keep the old version that would make things a little smoother when deploying a new app that has the same name.

Our scenario is an inhouse app is deployed using pmpc cloud as a custom app then they want to update the app, however they need the old version available until the server is updated and then the new version can be installed around 10PM. Then we have to manually delete the old app and deployment.
