The problem: When deploying an app or creating a custom app , there are certain parameters that are no longer available after deployment has been made. If you notice a detail you want to change, like a typo in the description of a custom app, you will need to delete it and create it from scratch, while other parameters can be edited whenever you want to.
The suggested solution: Any parameter that can be set during deployment should also be possible to edit after deployment, and it shouldn't matter if you start from the "app catalog" or "deployments" menu when you want do make an adjustment.

Any arguments specified during the creation of the custom app cannot be edited, you are correct.
Currently, a workaround would be to:
Create your custom app with some basic, default parameters
Specify your additional parameters during the Deployment creation as seen in my screenshot below:
This will allow you to edit the deployment as needed and modify the Additional Argument field.
